Customised Commis Chef training
As a Responsible Employer, Barrière offers a Commis Chef training programme to promote the professional integration of individuals with disabilities.
For a number of years, Barrière has been fighting against discrimination due to disability. As part of its Responsible Employer approach, it implemented a commis chef training programme in 2015 in order to promote the professional integration of individuals with disabilities.
In June 2016, five disabled people obtained their commis chef training certificate following a nine-month training course. This specially tailored project illustrates Barrière's desire to assist disabled workers with career changes and to enrich their professional training.
Creating a "bespoke" training course
The combination of theoretical instruction and experience in the field forms the basis of this new training course designed by the Barrière's disability project and the Mulhouse Rehabilitation Centre (Centre de Réadaptation de Mulhouse). The aim? Twelve weeks of instruction at CIFHOR (the International Centre for Hotel and Restaurant Training) in Strasbourg and 24 weeks of professional experience in a Barrière establishment.
Developing and enriching skills
Suitable profiles are first identified by the Mulhouse Rehabilitation Centre, which carries out a meticulous selection procedure to ensure the success of the training. After confirming their aptitude for the role of commis chef, Barrière selected the candidates on the basis of their motivation and interpersonal skills. From La Baule to Blotzheim, Enghien-les-Bains, Deauville and Pont L’Evêque, the trainees developed their skills within the "Tables Barrière" teams.
Identifying new talents
For Barrière, the aim is twofold: to train and improve the professional skills of people with disabilities in its establishments, as well as to identify candidates for future recruitment in its teams. The programme helps to ensure that disability poses no obstacle to talent.
